Pumpkin + Packing

Since I'm now in full-on autumn mode, you know it was only a matter of time before I tried to integrate the autumnal flavor into an overnight oats creation. Behold: vanilla protein overnight oats with pumpkin banana soft serve.


Now listen up. I'm a die-hard chocolate girl. But this is potentially the most amazing overnight oats I've ever consumed. Last night, I added a heaping tablespoon of my new vanilla protein powder into the basic overnight oats mixture. Then today, after letting the banana get to "soft serve" texture in the food processor, I added 1/3 cup of canned pumpkin, a drizzle of maple syrup, and a couple shakes of cinnamon. After layering it parfait-style, I topped it with some melted almond butter.


Well, it may not be the prettiest thing you ever did see.

But ohhhhhh man. Y'all have got to try this one for yourselves. Complete and total mouthgasm.

Continuing with the pumpkin theme, I made a batch of pumpkin muffins yesterday using a Post Punk Kitchen recipe--these are the authors of my absolute favorite cookbook, Veganomicon. I also added a simple oat streusel topping before baking: just melt a pat of butter/Earth Balance, then add a tablespoon of brown sugar, 1/4 cup rolled oats, and about 1/4 teaspoon of cinnamon. These turned out sooo well! They are very moist and light. Luckily there are plenty to take with us on the drive to Saugatuck.


Sorry for a somewhat short post today, but I've got to get a move on packing for our trip. The mess in my room is getting worse by the day so trying to pack and find everything I need might take a little while.... haha. However, it's only three days, so I don't really need to bring too much. I always end up over-packing. When traveling, what are your essentials? I'm definitely loading up my iPod with some new music for the 6-hour car ride, and maybe I'll pick up a couple magazines to read.

Well, I'm off to attend to the task of packing my bags (and facing the enormous mess in my bedroom) before going to work 3-10. Yuck! At least I have the next several days off to look forward to. Since you probably won't be hearing from me again until Friday, I just wanna say I hope everyone has a GREAT rest of the week! :)

  2. I've been looking for canned pumpkin everywhere, but your oats look great! I can't wait to give that recipe a try once I find the pumpkin--thankfully falls comin' and that means more pumpkins!

    I am leaving on a trip on Friday and my essentials are iPod, books, comfy clothes for the car ride, magazines and lots of food. Hah, I am a bar hoarder so when I go on trips or even am gone for the day, I always make sure I have good food with me in case there are no other options!

    Have an amazing few days off from work and a fun trip :)

  6. S: The banana part is simply a sliced & frozen banana blended in a food processor until it gets to the right consistency--then add chocolate, peanut butter, whatever. And the oatmeal mixture is 1/3 cup oats, 3/4 cup soymilk, 1.5 tablespoons chia seeds, and a dash of vanilla extract. This time I didn't add the vanilla extract because I used the protein powder instead :) You have to try it! It's amazing!

  7. Ooh you found pumpkin? I haven't found any in a while. There's been a shortage from a bad harvest for a while now. Hopefully it'll come back! And that actually is a very pretty drink :) At first glance I thought it was just a pretty cup.

    And I go with the ipod, and the magazines as well. Along with gluten free snacks haha being gluten free and traveling doesn't mix very well... Have a good one!!

  10. Hey, fellow pumpkin lovers.... I actually had a huge can of pumpkin in my pantry that had been purchased this past winter. I haven't looked for it in stores yet this season, but hopefully you'll be able to get your hands on it soon!
